    Ingredients

    1. 2 tablespoons Sunflower Oil
    2. 1 chopped Onion
    3. 1 clove peeled crushed Garlic
    4. 400g Chickpeas
    5. 1 tsp Ground Cumin
    6. 1 tsp Ground Coriander
    7. Handful Parsley
    8. 1 beaten Egg

    How to prepare

    step 1 Heat 1 tbsp oil in a large pan, then fry the onion and garlic over a low heat for 5 mins until softened. Tip into a large mixing bowl with the chickpeas and spices, then mash together with a fork or potato masher until the chickpeas are totally broken down. Stir in the parsley or dried herbs, with seasoning to taste. Add the egg, then squish the mixture together with your hands. step 2 Mould the mix into 6 balls, then flatten into patties. Heat the remaining oil in the pan, then fry the falafels on a medium heat for 3 mins on each side, until golden brown and firm. Serve hot or cold with couscous, pitta bread or salad.

    Falafel Pita Sandwich with Tahini Sauce

    1. 12 Falafel
    2. 1/4 cup Tahini
    3. 1/4 cup Water
    4. 2 tablespoons Lemon Juice
    5. 2 cloves Garlic
    6. 1/4 tsp Paprika
    7. 6 Pita Bread
    8. 1 Lettuce
    9. 1 Tomato
    10. 1/2 Cucumber
    11. 1 Dill Pickles
    12. 1/4 Red Onions
    13. 3 tsp Harissa Spice

    How to prepare

    Preheat the oven to 450 degrees F (230 degrees C). Place falafel on a baking sheet. Bake in the preheated oven until heated through, 8 to 10 minutes. While falafel bake, whisk tahini, water, lemon juice, garlic, and paprika together in a bowl. Cut about 1 inch from the top of each pita to form a pocket. Add 2 falafel to each pita with equal amounts lettuce, tomato, cucumber, pickle, and red onion. Drizzle each with about 1 tablespoon tahini sauce and some harissa.
